Groovy Granny White’s Gourmet Bouillie (with a Twist!)


Ingredients:


  • 2 cans evaporated milk
  • 3 cups whole milk (feel free to use part cream for extra richness!)
  • 1 cup heavy cream
  • 1 can water (or try using brewed coffee for a subtle mocha flavor!)
  • 3 egg yolks
  • 1 cup cornstarch
  • 1 cup water
  • 1 cup granulated sugar (or try brown sugar for a caramel note)
  • 1 stick (1/2 cup) unsalted butter, cut into cubes
  • 2 teaspoons vanilla extract (or try almond, coconut, or even a splash of bourbon!)
  • Pinch of salt (brings out the flavors!)


Optional Fun Add-Ins:


  • Spices: 1/2 teaspoon ground cinnamon, nutmeg, or cardamom for warmth.
  • Citrus Zest: The zest of 1/2 an orange or lemon for a bright zing.
  • Chocolate: 1/4 cup cocoa powder for a chocolate bouillie, or chocolate chips stirred in at the end.
  • Boozy Boost: 2 tablespoons of your favorite liqueur (like amaretto, rum, or Grand Marnier) added after cooking.
  • Fruit: Fresh berries, sliced bananas, or diced peaches folded in after the bouillie has cooled slightly.
  • Toppings: Whipped cream, toasted coconut flakes, chopped nuts, or a drizzle of caramel sauce.


Instructions:


Scald the Milk: In a large, heavy-bottomed saucepan, combine the evaporated milk, whole milk, heavy cream, and water (or coffee). Bring to a rolling boil over medium heat, then immediately reduce heat to low and let it scald for a few minutes (don't let it burn!). This step is crucial for a smooth texture.


Temper the Cornstarch: In a separate bowl, whisk together the egg yolks, cornstarch, and 1 cup of water until smooth. This prevents lumps.


Combine and Cook: Turn off the heat under the milk mixture. Slowly drizzle the cornstarch mixture into the hot milk, whisking constantly to prevent lumps. It's essential to keep stirring during this step.


Sweeten and Enrich: Add the sugar, butter cubes, and salt to the saucepan. Return the heat to low and cook, stirring continuously, until the bouillie thickens to a pudding-like consistency. This will take about 10-15 minutes.


Flavor and Finish: Remove from heat and stir in the vanilla extract (or other flavoring).  If using any optional add-ins like spices, citrus zest, or cocoa powder, stir them in now. If adding liqueur, wait until the bouillie has cooled slightly.


Cool and Serve: Pour the bouillie into individual serving dishes or a larger bowl. Cover and refrigerate for at least 2 hours, or until completely chilled.


Get Creative with Toppings: Before serving, have fun with toppings! Whipped cream, toasted coconut, chopped nuts, fresh fruit, or a drizzle of caramel sauce all add deliciousness and visual appeal.

  • Heavy-bottomed saucepan: Prevents scorching.
  • Constant stirring: Essential for a smooth, lump-free bouillie.
  • Low heat: Prevents the eggs from curdling.
  • Don't overcook: The bouillie will thicken as it cools.
